This week I'm trying to focus on grocery shopping and cooking. We've got a baby due in a few weeks here! At this point, I'm not sure I have the energy for a full intense day of freezer cooking, so I'm trying to just make a few things each week for the next couple of weeks.
Dinners this week involve cooking a big pack of chicken and a roast beef early in the week. That way we can use the meat all week, and I'll have more time for cooking and baking for the freezer. I know it will make a big difference to me to have a few dinners and baked goods saved for when the baby comes, and it will save us from spending extra money on groceries or takeout too.
Breakfasts:
cereal, poptarts, yogurt, fruit
Lunches:
cold cut sandwiches, frozen homemade lasanga, tuna, cheese and crackers
Dinners:
Mon - Baked chicken, oven fries, green beans
Tues - Mom's Portable Beef, oven fries, salad
Wed - Pesto chicken sandwiches on homemade rolls, fruit
Thurs - Beef and Chicken fajitas, corn
Fri - Homemade pizza, salad
Sat - Overnight trip for our anniversary!
Sun - tba
Baking List:
- tortillas
- sandwich rolls
Freezer Cooking:
- 1-2 extra pizzas (make with dinner on Friday)
- peach coffee cake (with $.49/lb. peaches from Harris Teeter)
- extra loaf of sandwich bread
