Menu Planning Monday: Lenten Meals


We are observing the season of Lent for the next six weeks, which traditionally involved totally giving up meat. Today, Catholics are only required to give up meat on Fridays during Lent, but I thought I would try to do it an extra day as well, at least for dinner. Good for the soul and good for the wallet!

So here's my menu for the next two weeks:

Breakfasts:
Yogurt, bagels, cereal, oatmeal, scrambled eggs, muffins

Lunches:
Beans & rice, cold cuts, tuna, cheese and crackers, peanut butter & apples (my two-year-old's current favorite)

Snacks:
Chips, chex mix, fruit, dried fruit, homemade granola bars (plan to try this week!)

Mon - Leftover chicken soup and crackers
Tues - Homemade pizza, carrot sticks (I'm excited to try this pizza crust recipe, because it looks even quicker than my current bread machine recipe.)
Wed - Baked Ziti, bread, salad
Thurs - Garlic chive chicken, noodles, spinach
Fri - Crockpot Mac & Cheese, fruit salad
Sat - Leftover chicken and noodles

Sun - Dinner at Michael's parents
Mon - Meatloaf, scalloped potatoes, green beans (I don't have a great meatloaf recipe - any suggestions?)
Tues - Something with pork chops
Wed - Ginger Lentil Soup, homemade bread
Thurs - Leftover meatloaf, rice, green beans
Fri - Frozen fried fish, corn
Sat - Leftovers

  1. Liz, your menu looks quite tasty!
    As far as meatloaf goes we have two extremes here. My mom always made meatloaf by simply combining ground beef, an egg, milk and several pieces of bread together in a bowl and then spreading it in a 13x9 (or 8x8 for smaller groups) pan. It was not really a loaf but even my youngest brother who is quite picky loves it.
    However, Alex enjoys more spice in his food so I found a recipe called Firefighter's Meatloaf on allrecipes which we really liked. However, I'm not sure all kids would like it. Hope that helps.
    I can't wait to hear how the granola bars turn out. I really like granola (esp. with yogurt) and granola bars but don't keep many of the ingredients you need to make it on hand and was wondering how cost effective it really would be, esp. considering how cheaply you can get them (at times) with sales and coupons.

  2. This is the best meatloaf ever:

    Barbecue Meatloaves

    3 lbs. ground beef (I use 1 lb. turkey)
    2 c. oatmeal
    2 eggs
    1 c. chopped onion
    1 13-oz. can evaporated milk
    1/4 t. garlic powder
    2 t. salt
    1/2 t. pepper
    2 t. chili powder
    I also add chopped bell pepper and shredded carrots to the meat.

    Mix well and shape into loaves or balls (use about 1/3 c. per serving).

    Sauce:

    1 c. ketchup
    1 T. liquid smoke, if desired (I used this)
    3/4 c. brown sugar
    1/4 t. garlic powder
    1/4 c. chopped onion

    Heat to dissolve and pour over loaves. Bake at 350 degrees for 1 hour.

    (I make extra sauce and just spoon it cold over the loaves). SOOO good!
